Jjajangmyeon
One of my favorite noodle dishes of all time...

When I crave comfort, I make Jajangmyeon. The super chewy noodles are coated in a thick, savory black bean sauce that's often studded with tender pork and vegetables. I actually prefer shrimp as the star protein and for vegetables, I keep it simple with zucchini, cucumbers, and yellow pickled radish.

Instructions
Cube your potatoes (½), onion (½), zucchini (1) and shrimp (10 large).
Cook your shrimp with 1 tbsp oil, add a pinch of salt and set aside when it's turning pink.
In the same pan, add your potatoes first and saute for 2 minutes.
Add your zucchini and onion for an additional 2 minutes.
Make a circle in the middle of your pan and add the remaining vegetable oil. Add your black bean paste (4 Tbsp) and let it fry for 1 minute.
Stir everything in together and mix well. You can add your shrimp back in as well.
Combine chicken bouillon (1 tsp) and water (¼ cup), mix well, then add it to your sauce. Stir for 2 minutes.
Combine cornstarch (½ Tbsp) and water (¼ cup) to make slurry mixture and add that in the pan to thicken the sauce.
Boil your noodles (2 servings) according to package and cut your cucumbers (½) into thin strips for garnish.
Assemble your bowl in the following order: noodles, sauce, cucumber garnish and sesame oil. Enjoy!
