Sumo Orange Cucumber Salad
Oranges and cucumbers... not the most obvious pair, but they're SO good together

This combination started out as an experiment. I love Sumo oranges, and their short season always has me looking for new ways to enjoy them. One day, I paired them with cucumbers, a touch of chili oil, and a splash of soy sauce. The result was unexpectedly unforgettable: the orange's sweet-tart juice with the cucumber's cool freshness, all balanced by savory heat. It's a simple, vibrant mix you'll want to try before the season is over.

Instructions
Wash and cut your cucumbers (6) then salt them for 15 minutes to draw out the moisture.
Rinse and pat very dry.
Add peeled oranges (1), ginger (½ Tbsp), soy sauce (1 Tbsp), chili oil (1 Tbsp), sugar (½ Tbsp), sesame oil (pinch), sesame seeds (½ Tbsp), and cilantro.
Mix and store in fridge for up to 1 week (but you'll finish it sooner, trust me).
