Mango Sago

Mango Sago is a popular and refreshing East Asian dessert that instantly takes me back to my childhood vacations in Hong Kong. It features cubes of fresh, ripe mango and chewy sago pearls suspended in a creamy, sweetened coconut milk and evaporated milk base. This dessert is pure nostalgia for me which is probably why it's one of my favorite desserts ever. It's typically served chilled, making it the perfect cool treat on a hot summer day. I usually make a biggg batch and give it out to my friends.

Instructions
Blend 4.5 mangos with condensed milk (¼ cup), set aside in fridge. Save some mango chunks for the very end.
Bring water (5 cups) to a boil and cook sago (⅔ cup) for 10 minutes or until translucent.
Let that sit for 10 minutes then run under cold water to get rid of all the starch and strain well.
Mix the sago with coconut milk (¾) then add the blended mangoes & mango chunks. Enjoy!!
