When I was growing up, the Costco rotisserie chicken was a weekly fixture for our family of five. It was used in many ways: shredded into salads, served simply with soy sauce and rice, or just eaten straight off the bone. With three kids in the house, the chicken wouldn't last long, and my dad would take the carcass and add it to a pot of boiling water with vegetables and herbs to create the most satisfying chicken soup.

Now as a 27 year old living with just my fiancé, we don't get the rotisserie chicken all that often because our Costco trips are less frequent, but when we do, it's such a treat and I look forward to it every time.

Instructions

  1. Boil your water (6 cups) and add the rotisserie chicken (1). Add roughly chopped aromatics: onion (1), ginger (7 coins), scallions (2 stalks) and cilantro stems (15 stalks). Boil for 60 minutes and add salt (1 tsp).

  2. Strain the broth and fork apart the chicken. You can throw away the aromatics. Add the chicken and broth back into one pot and bring to a boil.

  3. Roughly chop your veggies and add them to the soup. Boil for an additional 10 minutes in the soup or until tender. Use whatever you want, my favorites are carrots and daikons.

  4. Add goji berries (2 Tbsp) last and enjoy!
