Mango Sticky “Rice"

If you've followed along my health journey, you'll know that I was diagnosed with PCOS last year. While I'm very thankful that my symptoms are mild– I have made quite a few changes to my diet in the hopes of balancing out my hormones. One of the key ways to do this is to avoid foods that spike my blood sugar, and unfortunately, that meant limiting my rice intake. One of my favorite desserts is Mango sticky rice, so I tried to find substitutes and surprisingly, chai seeds did the trick. I know you might not believe me, but you really have to trust the process with this one... I promise you'll love it!

Instructions
Combine coconut cream (1 can), water (⅔ cup), chia seeds (6 Tbsp), and honey (2 Tbsp). Stir well and leave in the fridge overnight.
Cut your mango (1) however you'd like and add it on top. Drizzle a bit of coconut cream and honey, then sprinkle some toasted sesame seeds on top.
You can also sub out mangoes with strawberries or whatever fruit you prefer
